if this is a life long keeper, the watch you choose will hopefully have the layers of interest that keep your attention,  It sounds like the Dornbluth really intrigues you, and may well be the one to purchase.  But I a m loathe to suggest it--you have yet to strap it on your wrist.  Hopefully someone will post some detailed pics.  Can you email the Dornbluths and request some detailed pics?

Perhaps one other regulator that might interest you is the Sattler watch.  Based on a Valjoux 7750, with a dead-beat second complication placed by none other than Habring, and if memory serves 44mm on the wrist, with a dial based on the famous Sattler clock......And I bet you'll never see that one in the wild!
