Assuming that you're after custom colors, Patek Philippe has a very wide range of straps in their strap catalogue. But if you're after materials that isn't offered in their catalogue, then you're out of luck. Personally, I would avoid using steel spring bars on a watch that came with gold spring bars as there is a small chance that there would be some eventual excessive wear.

yes, perhaps find straps that do not come with quick release, and just use the spring bars on the current strap

actual experience is very valuable!... would guess the potential issues would come after many years of use and depending on the use of the watch (for example, a white gold diver that would see some tougher use, perhaps)

Nothing to worry about
No, I donāt think you have anything to worry about. Whether the springbars are white gold, steel, or otherwise, if you arenāt proficient at changing them youāll scratch the inside of the lugs anyway. But who cares, itās on the inside ā no one else sees it...
