Nice watch.
Never, ever, polish it or otherwise "deface" this gem, no matter who does it. The scratches and wear on the case are part of its history and give it a natural look. Polishing literally diminishes the watch and gives it a gussied-up look.
As for the crystal, it should be as low as possible, which best shows the dial. If the crystal is suitable and has some scratches these can be removed without removing the crystal from the watch with the smallest amount (head of a pin or less) of toothpaste rubbed with the thumb. Extreme care should be given to not allow the paste to touch the case. When the polishing is completed carefully remove the excess toothpaste with a damp tissue. Repeat as necessary
