My sense is sapphire tips the scales towards . . .
. . . novelty in a watch carefully crafted to represent a balance between new and old. Hesalite, conversely, tips the balance back towards vintage. So it all basically comes down to whether you see the third generation Speedy as a nod towards an updated past, or vintage-themed future.
Being an old-school kinda guy, my preference is for hesalite. It comforts my vintage tendencies. But if you're a forward-looking kinda guy, then by all means, go sapphire.
Of course, I went for Ed, which is simultaneously chummy old school framed by sapphire front and back. Go figure.
