Have more faith in Mrs. Stern...
Good questions Kari,
1. "why would they produce a bigger number of simple watches when they can also sell the complicated ones?"
It's not about the "bigger number" but the the "better " and more innovative of design, and those are key values of Patek, they will never stop improving and innovating and listening to their customers, but we must speak up. They are listening.
Remember, the simple watches are often entry watches for lifetime Patek customers. But a potential lifetime customer can quickly be lost for ever when he is unable to step up from a "simple watch" to the "complicated ones" if the complicated ones do not meet his lifestyle requirements.
The most important question in business is: What does the customer value?
2. "One of the basic values of Patek is Rarity and another one is Exclusivity. How would a bigger collection of sporting watches fit with these basic values?"
They discontinue watches over time. The better designed watches will be the ones that will survive. I also trust that Mrs. Stern is never "satisfied" or "sated" with the lineup, at least to the point to not be innovating toward the next design evolutions. While slow and steady, it is a constant movement, unlike the near motionless frozen state of design at Rolex.
Bottom line Patek is delivering to the needs and wants of the customer for the sake of getting and keeping customers for generations. They exist to serve us, not us them.
