I'm honestly not a fan of J gold, but I have to agree with other friends that, save some incredible vintage pieces, the 5231J is the first that comes to mind, even to a non-J lover.
However, even the enamel on the 5231J for me was not enough to convince me to ask for it....so I'm probably not the right person to give advice on the topic! 
The only thing I'd suggest you is to keep in mind that J gold, even if not very popular at the moment, seems to be slowing coming back to be appreciated by collectors. Hence -- always assuming you like a given model -- its popularity might not necessarily be a big concern in a few years from now, who knows! ;-) Cheers.

Yes, R is easy to love.
But J is elusive. I can't think of any model range where Patek enthusiasts nearly universally regard the J as the best choice of the range.

Yes, the 5070 looks great in J - as it does in any metal. The 5110 however, is an obtainable and interesting choice that does look very appealing in yellow.

It’s a beauty but 5131/1P is a different level.
I never thought that I would say this since, as you know, I got 5231J before 5131/1P and I was deeply in love with 5231J (and I still am). But 5131/1P is such a stunning overall package (except for the clasp 😂).
While waiting for the release of a blue dial 5711/1J (you listening Thierry?) my vote goes to 5231J ...
