Tourbillons are theoretically effective when an escapement rests in one fixed position, such as a pocketwatch sitting vertical in a pocket or in a clock. Someone walking around with their wristwatch doing all sorts of people things with their arm is effectively doing the work of a tourbillon since the escapement is constantly experiencing different positions... thus averaging out the effects of gravity.
