Congratulations on accomplishing so much in so little time!
What I find interesting about your collection is that each watch represents a complication or set of complications different from each of the others. Taking into account this apparently well thought out approach, here are some possiblities: 1) a time only - since you have no steel watches, how about a 5711/1A; 2) a dual time or dual time chronograph (5990); 3) an application piece - e.g. a minute repeater; 4) a limited edition piece with a function not part of your collection, e.g. a 5100 10 day; and 5) then there is a whole other world to explore - Vintage. Should you go vintage I suggest that you only go for the very best condition examples of whatever appeals to you and be patient. Assembling a great vintage collection takes years (many) not months. But the hunt is half the fun.
