The siphon sounds like a lot of fun.  I hope you will share your progress with it. I must admit our drip coffee at the house is barely passable and I have taken to avoiding it.  As much as I would love to play with a siphon, I'm devoted to developing my abilities with the La Spaziale.  As for pre-infusion, I have not done much experimenting yet.  I have it set at 3 seconds for now.  Nor have I played with temperature, yet. The machine was shipped with the brew temperature set to 93 degrees C and I have left it there for now.  When I feel a little more confident with the variables introduced by my own hand, I'll start to play more with pre-infusion and temperature.  One other nice feature of the LaSpaz, by the way, is the ease with which you can compensate for offset temperature at the brew head.  The distributor from whom I purchased bench tests each machine and pre-sets the offset by means of testing with a scace thermometer, and I trust there callibration, for now.

Notwithstanding the bench test, I did have one problem on day one with my machine.  There was a hairline crack in a "cover" of the flow meter that resulted in a tiny leak.  Fortunately, the customer service from the distributor was absolutely fantastic.  They helped troubleshoot the issue over the phone and rushed me a new part, which I was able to install with relative ease.  The most likely cause for the crack was water freezing within the flow meter during shipment. The picture immediately below shows the part with the crack.  Below it is a picture of the base of the flow meter, and below that picture is the flow meter with the new part installed.
