Brian, all of the above.

 

I'm mainly pulling ristretto shots with a naked triple at present, and dosing and timing (particularly with a 53mm machine) is a bit of a crap shoot.  So I look for flow and blonding and adjust grind accordingly.  When I pull doubles, I time in order to adjust my grind.  I should weigh as well, but I am too lazy, and I have gotten competent with dosing straight from the grinder.

This week I am trying out Counter Culture's Apollo 6.3 (and enjoying it).
